Je takmer bez z\u00e1pachu a chuti, m\u00e1 siln\u00e9 hygroskopick\u00e9 vlastnosti. CMC sa \u013eahko rozp\u00fa\u0161\u0165a vo vode a vytv\u00e1ra \u010d\u00edry g\u00e9lov\u00fd roztok, ale zost\u00e1va nerozpustn\u00fd v organick\u00fdch rozp\u00fa\u0161\u0165adl\u00e1ch, ako je etanol. Vodn\u00fd roztok 1% m\u00e1 zvy\u010dajne pH v rozmedz\u00ed od 6,5 do 8,5, pri\u010dom najlep\u0161ie sa spr\u00e1va pri pH 7. Dlhodob\u00e9 zahrievanie nad 80 \u00b0C v\u0161ak m\u00f4\u017ee denaturova\u0165 g\u00e9l, \u010d\u00edm sa zni\u017euje jeho viskozita a \u00fa\u010dinnos\u0165. Var pri vysokej teplote nad 100 \u00b0C alebo dlhodob\u00e1 steriliz\u00e1cia pri ultravysokej teplote m\u00f4\u017eu CMC v\u00fdrazne degradova\u0165, \u010do vedie k r\u00fdchlej strate viskozity. CMC je stabiln\u00e1 v slab\u00fdch alkalick\u00fdch roztokoch, ale \u013eahko hydrolyzuje v kyslom prostred\u00ed. Medzi faktory ovplyv\u0148uj\u00face DS patr\u00ed pomer alk\u00e1lie a \u00e9terifika\u010dn\u00e9ho \u010dinidla, \u010das \u00e9terifik\u00e1cie, obsah vody, teplota, pH, koncentr\u00e1cia roztoku a pr\u00edtomnos\u0165 sol\u00ed.<\/p><p>Produkty CMC s vysokou \u010distotou vykazuj\u00fa v\u00fdraznej\u0161ie vlastnosti a v\u00e4\u010d\u0161iu stabilitu. FAO a WHO schv\u00e1lili \u010dist\u00fa CMC na pou\u017eitie v potravin\u00e1ch po rozsiahlom biologickom a toxikologickom testovan\u00ed. Medzin\u00e1rodne akceptovan\u00fd denn\u00fd pr\u00edjem (ADI) je 25 mg na kg telesnej hmotnosti, \u010do je pribli\u017ene 1,5 gramu na osobu a de\u0148.
