Stabilit\u00e0 chimica: Stabile agli agenti chimici, al calore e alla luce, con una certa resistenza alle muffe.<\/p><p>6. La CMC si scioglie facilmente in acqua formando una soluzione limpida simile a un gel, ma rimane insolubile in solventi organici come l'etanolo. Una soluzione acquosa di 1% ha in genere un pH compreso tra 6,5 e 8,5, con prestazioni ottimali a pH 7. L'ebollizione ad alta temperatura oltre i 100\u00b0C o la sterilizzazione prolungata ad altissima temperatura possono degradare significativamente la CMC, portando a una rapida perdita di viscosit\u00e0. La CMC \u00e8 stabile in soluzioni debolmente alcaline, ma si idrolizza facilmente in ambienti acidi. All'aumentare del DS aumentano la solubilit\u00e0, la trasparenza e la stabilit\u00e0 della soluzione. Quando il DS \u00e8 compreso tra 0,7 e 0,9, le soluzioni di CMC presentano una certa trasparenza e un comportamento pseudoplastico. Con una DS superiore a 0,90, la soluzione diventa pi\u00f9 trasparente e le sue propriet\u00e0 reologiche migliorano. I fattori che influenzano la DS includono il rapporto tra alcali e agente eterificante, il tempo di eterificazione, il contenuto d'acqua, la temperatura, il pH, la concentrazione della soluzione e la presenza di sali.<\/p><p>I prodotti CMC di elevata purezza presentano caratteristiche pi\u00f9 distinte e una maggiore stabilit\u00e0. La FAO e l'OMS hanno approvato la CMC pura per l'uso negli alimenti, a seguito di approfonditi test biologici e tossicologici. La dose giornaliera accettata a livello internazionale (ADI) \u00e8 di 25 mg per kg di peso corporeo, pari a circa 1,5 grammi al giorno per persona.
