Je t\u00e9m\u011b\u0159 bez z\u00e1pachu a chuti a m\u00e1 siln\u00e9 hygroskopick\u00e9 vlastnosti. CMC se snadno rozpou\u0161t\u00ed ve vod\u011b za vzniku \u010dir\u00e9ho gelovit\u00e9ho roztoku, ale z\u016fst\u00e1v\u00e1 nerozpustn\u00e1 v organick\u00fdch rozpou\u0161t\u011bdlech, jako je ethanol. Vodn\u00fd roztok 1% m\u00e1 obvykle pH mezi 6,5 a 8,5, p\u0159i\u010dem\u017e nejl\u00e9pe funguje p\u0159i pH 7. CMC je stabiln\u00ed ve slab\u011b alkalick\u00fdch roztoc\u00edch, ale snadno hydrolyzuje v kysel\u00e9m prost\u0159ed\u00ed. FAO a WHO schv\u00e1lily \u010distou CMC pro pou\u017eit\u00ed v potravin\u00e1ch na z\u00e1klad\u011b rozs\u00e1hl\u00fdch biologick\u00fdch a toxikologick\u00fdch test\u016f.
